A COMPARISON OF DEMANDS FOR MEAT PRODUCTS IN THE PACIFIC RIM REGION AgEcon

The Rotterdam model is used to obtain estimates of demand parameters for meat products in Taiwan, South Korea, and Japan. Unlike most previous studies of demand systems, the model takes into account simultaneous-equation bias which arises due to the endogeneity of total expenditure. Beef, pork, and chicken are separable from marine products for each Pacific Rim country. However, demand elasticities for beef, pork, and chicken are different among the various Pacific Rim nations. One may not then use the elasticity estimates of a particular country and apply them to other Pacific Rim markets.

The authors found that food retailers would incur sizeable incremental costs depending on the mix of labor and capital utilized if a dual tax structure was imposed. Thus, the tax savings to consumers then would be offset not only by the recoupment of the lost revenue by government, but also by the incremental costs incurred by the food retailers.

A NONPARAMETRIC ANALYSIS OF CONSUMER PREFERENCES FOR FRESH MEAT PRODUCTS AgEcon

Nonparametric statistical methods (the Kruskal-Wallis test and Dunn's multiple comparison procedure) were used to analyze consumer preferences for fresh meat products (chicken, beef steak, beef roast, fish, ground beef, pork, turkey, and lamb) in a retail food chain in Houston. On a pairwise basis, significant differences in ratings were evident for the majority of the fresh meat products in terms of frequency of purchase as well as taste and quality. In particular, chicken was not only the most frequently purchased fresh meat product but also compared favorably to all meat items in terms of taste and quality.

A theoretical framework in which to formally consider health and nutrition factors in demand analyses is developed. The framework is employed to empirically identify and assess the impacts of information pertaining to cholesterol on the demands for beef, pork, poultry, and fish. Several contemporary models of consumer demand comprise complete sets on nonlinear demand functions. Estimation methods should take into account parameter nonlinearity, cross-equation correlation, variance-covariance singularity of the disturbance terms, and various parameter restrictions. This report examines the likely effects of additional agricultural water rights under the Columbia River Initiative (CRI) on net crop revenues (hay, orchards, vegetables, potatoes, wheat, and other crops) in the state of Washington over the next 20 years. This study corrects for four potentially serious methodological flaws made in two previous studies associated with the CRI and concludes that those studies substantially overestimated the net revenues accruing to producers in the Columbia River area from new irrigated acreage under the CRI. ANALYSIS OF ALCOHOL CONSUMPTION IN THE UNITED STATES: PROBABILITY AND LEVEL OF INTAKE AgEcon

This article examines the impact of socio-demographic factors on individual consumption of alcohol in the United States using the Heckman procedure and logit analysis. Factors considered are urbanization, race, ethnicity, region, weight, height, sex, food stamp participation, employment status, diet status, day of consumption, household size, age, and income. All the variables, with the exception of ethnicity and food stamp participation, significantly influence the decision to consume alcohol. Results also indicate that urbanization, region, sex, food stamp participation, and household size significantly affect the level of alcohol consumption.

ANALYSIS OF FOOD AWAY FROM HOME AND FOOD AT HOME CONSUMPTION: A SYSTEMS APPROACH AgEcon

The demand for food away from home, food at home, and non-food items is investigated using a complete systems approach. Using the linear approximation of the dynamic version of the Almost Ideal Demand System, the results indicate that the share of total expenditure going to food away from home increases as the labor force participation rate of women increases. All expenditure elasticities are positive and all own-price elasticities are negative. Moreover, the demand for food away from home is more price sensitive than the demand for food at home. Seasonal patterns of consumption are also evident.

ANALYSIS OF MARKETING MARGINS IN THE U.S. LAMB INDUSTRY AgEcon

Factors affecting marketing margins were identified and assessed using a relative price spread technique. Margins were disaggregated into slaughter-to-wholesale and wholesale-to-retail for a more complete understanding. Marketing costs, concentration, demand, and price were used to explain variations within these margins. Results showed that packer concentration had a significant effect on margins. Forces of supply and demand (as represented by production and market price) and changes in marketing costs also explained the variation in margins. A higher degree of price transmission from slaughter-to-wholesale level was observed in comparison to the wholesale-to-retail level.

Analysis of Marketing Margins under Food Recalls and BSE Outbreaks in the U.S. Beef Industry AgEcon

It is generally observed that whenever there are cases of disease outbreaks or food recalls, there is a concomitant decline in commodity prices. However, it is still not clear what happens to price spreads among affected agents in the marketing chain. To shed light on this issue, we estimate the collective impact of Bovine Spongiform Encephalopathy (BSE) and food recalls on marketing margins associated with the U.S. beef industry over time. U.S. households spend nearly one-half of their food budget for food away from home (FAFH) with an increasing share for fast-food facilities. These trends can impact the structure of the food distribution industry, nutritional intake of U.S. households, and demand for goods at the farm level. This analysis investigates the effects of socioeconomic and demographic variables, both on the decision to consume FAFH by facility and on the decision of how much to spend on FAFH by facility. Based on National Panel Diary data, three facility types are considered: quick-serve, mid-scale, and up-scale.

Obesity is one of the most pressing and widely emphasized health problems in America today. Beverage choices made by households have impacts on determining the intake of calories, calcium, caffeine, and vitamin C. Using data from the Nielsen Homescan Panel over the period 1998–2003, and a two-way random-effects Fuller-Battese error components procedure, we estimate econometric models to examine economic and demographic factors affecting per-capita daily intake of calories, calcium, caffeine, and vitamin C derived from the consumption of nonalcoholic beverages. Our study demonstrates the effectiveness of the USDA 2000 Dietary Guidelines in reducing caloric and nutrient intake associated with nonalcoholic beverages.

ASSESSING EFFECTS OF PRICES AND ADVERTISING ON PURCHASES OF FINFISH AND SHELLFISH IN A LOCAL MARKET IN TEXAS AgEcon

Estimates of demand parameters for disaggregate finfish and shellfish products were obtained using scanner data from a retail food firm in Houston. Demand for the various products was elastic (except for oysters); in general, cross-price effects play a statistically significant role in pounds sold per 1000 customers. Own-advertisement effects are important, but cross-advertisement effects are generally marginal. Seasonality is a key factor in purchases of most finfish and shellfish products.

The demand for functional foods has increased notably in recent years due to growing consumer interest in diet and health issues. Currently, the food industry is introducing many types of new food products with functional attributes. Consequently, cannibalization is a critical issue for firms that offer multiple products within a certain product category.
